Cheesecake Cupcakes

1 cup sugar
3 (8-oz) packages plain cream cheese, softened
4 eggs
2 teaspoons lemon juice
1 package vanilla wafers
1 can cherry, blueberry or raspberry pie filling

Preheat oven to 350 degrees. Mix sugar, cheese, eggs and lemon juice until smooth. Line muffin tins with papers and place a vanilla wafer in the bottom of each. Spoon cheese mixture over wafers, filling cups 3/4 full.

Bake for 18-20 minutes. Cool. Cheesecakes will sink in the middle when cooling. Not to worry. Spoon pie filling over each and refrigerate at least an hour. If desired, top each with sweetened and flavoured whipped cream.
